Cacao Harissa Butter Beans with Homemade Spirulina Corn Tortillas

Serves 4

 

For the Spirulina Corn Tortillas:

Ingredients:

- 1 cup masa harina (specialty corn flour)

- 1/2 tsp spirulina powder

- 1/4 tsp salt

- 1 cup warm water


For the Cacao Harissa Butter Beans:

Ingredients:

- 2 tbsp olive oil

- 1 can butter beans, drained

- 2 tbsp cacao powder

- 2 tbsp harissa

- 1 onion

- 3 Cloves of Garlic

- Salt and pepper, to taste

- Optional coriander or pickled onions to garnish

 

Method:

 

To make the Spirulina Corn Tortillas:

1. In a large mixing bowl, combine the masa harina, spirulina powder, and salt. Mix well.

2. Gradually pour in the warm water while stirring continuously until a soft dough forms.

3. Knead the dough with your hands for a few minutes until it becomes smooth and consistent. If the dough feels too dry, add a little more water, and if it's too wet, add a little more masa harina.

4. Divide the dough into 8 equal portions and roll each portion into a ball. Cover them with a damp cloth to prevent them from drying out.

5. Preheat a comal or a large non-stick frying pan over medium-high heat.

6. Use a tortilla press or a rolling pin to flatten a dough ball into a thin, round tortilla. If using a tortilla press, place the dough ball between two pieces of plastic or wax paper before pressing it.

7. Carefully peel the flattened tortilla from the plastic or wax paper and place it onto the heated comal or pan. Cook for 30-60 seconds on each side, or until it starts to brown slightly.

8. Remove the cooked tortilla from the heat and cover it with a clean cloth to keep it warm while you cook the remaining tortillas.


To make the Cacao Harissa Butter Beans:

1. In a bowl, mix the butter beans, cacao powder, harissa, and salt and pepper. Stir the mixture until well combined.

2. Heat a large frying pan over medium heat and add the olive oil. Spread the oil evenly across the pan. Sautée onions and garlic for 15 min until soft and caramelised.

3. Add the cacao harissa butter bean mixture and stir continuously until the mixture is warmed through. Should you wish, oregano and cumin can also be added to season the dish.


Assembly:

1. Place a Spirulina Corn Tortilla on a plate.

2. Spoon a generous helping of the Cacao Harissa Butter Beans onto the tortilla.

3. Repeat for the remaining tortillas and filling.

4. Serve immediately and enjoy! You can enjoy with Fresh Coriander, Sour Cream, Salsa or just Pickled Onions


Feel free to adjust the level of spice by adding more or less harissa to suit your taste preferences.
